優雅、纖細、複雜，是我對黑皮諾這個品種最直觀的感受，作為世界上均價最高的葡萄酒品種，黑皮諾無疑也是最具魅力的品種之一，特別是在法國的勃根地，幾乎所有的紅酒都是由黑皮諾釀造，然而僅是一街之隔的園地，釀造出來酒的風格也可能是天地之別，如此耐人尋味的黑皮諾，自然成為全世界葡萄酒愛好者收藏的目標。
生長環境的高要求黑皮諾 Pinot Noir
黑皮諾對於生長環境有相當的要求，適合生長在寒冷氣候中，石灰黏土是最理想的土壤形態，但是由於相對早熟及果皮較薄，使得她抗病蟲害能力較弱，容易感染卷葉病、灰黴病等，且在成熟時容易落粒，在採收階段也特別需要小心大雨造成的影響，葡萄酒農會需要花更多心力在照顧黑皮諾，在勃根地許多知名的葡萄酒莊/園中，幾乎隨時可以見到酒農在園中巡視，注意葡萄狀況，避免變質。
甜美如紅寶石般的回報黑皮諾 Pinot Noir
雖然照顧黑皮諾生長的過程相當辛苦，但是回報是甜美的，她釀出的酒顏色較淺，通常呈現紅寶石色，年輕時香氣主要以果香及花香為主，通常會是紅莓、櫻桃、梅子、草莓、覆盆子、玫瑰花或其他花香，口感柔和溫潤，優雅細緻，豐富的層次與略高的酸度讓黑皮諾在陳年的潛力上也相當佔優勢，在陳年後通常會帶有皮革、雪茄、大地與松露等的迷人香氣。世界上較優良的產地為法國勃根地、香檳區、阿爾薩斯，美國的索諾瑪以及紐西蘭、澳洲的涼爽氣候產區。

Pinot noir [wiki] is a red wine grape variety of the species Vitis vinifera. The name may also refer to wines created predominantly from Pinot noir grapes. The name is derived from the French words for pine and black. The word pine alludes to the grape variety having tightly clustered, pine cone-shaped bunches of fruit.
Pinot noir grapes are grown around the world, mostly in the cooler climates, and the grape is chiefly associated with the Burgundy region of France. Pinot noir is now used to make red wines around the world, as well as Champagne, sparkling white wines such as the Italian Franciacorta, and English sparkling wines.
